Blackstone Peanut Chicken Lettuce Wraps
Another quick and easy (and somewhat healthy) griddle recipe for you… Blackstone Peanut Chicken Lettuce Wraps!
About 10 minutes of prep work, and another 10 minutes on the griddle and dinner is done.
You could also serve these as peanut chicken tacos in tortillas.
That is, if you have some family or friends who aren’t the biggest fan of lettuce wraps.
How to make Blackstone Peanut Chicken Lettuce Wraps
Start by prepping all your ingredients so everything is ready to go.
This griddle cook goes pretty fast.
Dice an onion, red or green bell pepper, shred a carrot, and mince some garlic and ginger.
Or take a little help from using store bought garlic and ginger paste 🙂
Then measure out the hoisin sauce, peanut butter, soy sauce, and honey before heading to the griddle.
First preheat your Blackstone Griddle or flat top grill to medium heat for a few minutes.
Then add some cooking oil of choice and the diced onion, pepper, and carrots.
Cook the veggies for 3 to 4 minutes, mixing with hibachi spatulas.
Then add a pound of ground chicken, garlic, ginger, hoisin sauce, peanut butter, soy sauce, and honey.
Cook this on the griddle for another 4 to 5 minutes.
Break apart the chicken with your hibachi spatulas and mix and combine everything together.
I did add some fresh Thai basil just because I had it growing in my garden, but it’s certainly not needed.
Let this cool a bit before making the lettuce wraps.

I set out some chopped peanuts, green onions, sriracha, and lime wedges to squeeze over top.
And some flour tortillas for those who prefer tacos over lettuce wraps 🙂

Blackstone Peanut Chicken Lettuce Wraps
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 onion diced
- 1 red or green bell pepper diced
- 1 carrot shredded
- 1 pound ground chicken
- 1 tablespoon garlic paste or fresh minced garlic
- 1 tablespoon ginger paste or fresh minced ginger
- 1/4 cup peanut butter
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 head Boston or butter lettuce
- Optional toppings: sriracha, chopped peanuts, green onions, lime wedges
Instructions
- Preheat the griddle over medium heat for a few minutes. Add some cooking oil of choice along with the diced onion, red or green pepper, and shredded carrot. Cook 3 to 4 minutes, mixing with hibachi spatulas.
- Add the ground chicken, garlic, ginger, peanut butter, hoisin, soy sauce, and honey. Cook 4 to 5 more minutes, mixing with hibachi spatulas and breaking apart the chicken.
- Remove from the griddle and let cool slightly and fill the lettuce leaves with the chicken mixture. Top with chopped peanuts, green onions, lime wedges to squeeze over top, and/or Sriracha if desired.
