- 3 pounds boneless skinless chicken thighs
- 1/2 cup peanut butter
- 1/2 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sriracha
- 1 tablespoon garlic paste or minced garlic
- 1 tablespoon ginger paste or grated ginger
- cooking oil of choice
- Optional: rice, yum yum sauce
Trim the chicken thighs and cut into bite size pieces. Place the chicken in a gallon size plastic bag.
Add the peanut butter, soy sauce, rice vinegar, sriracha, honey, garlic, and ginger to a bowl and whisk until evenly combined.
Add half of this sauce to the bag with the chicken and massage until evenly combined, set the other half of the sauce aside for dipping. Marinate in the fridge several hours or overnight. Put the chicken on kabob skewers. Preheat the griddle to medium heat. Add some cooking oil and cook the chicken skewers 4 to 5 minutes, flip and cook 4 to 5 more minutes.
Serve the chicken skewers with the remaining peanut sauce and with rice or yum yum sauce if desired.
