cooking oil of choice
4burger buns
4slicescheese of choice (or shredded cheese of choice)

Instructions
Place the chicken in a gallon size plastic bag. Add the pickle juice and brown sugar. Massage the bag until the brown sugar is dissolved. Place in a large bowl (in case of a leak) and into the fridge for 24 hours.
Remove the chicken from the bag, discard the bag and brine. Pat the chicken dry with paper towels. Sprinkle both sides lightly with seasoning blend of choice.
Preheat your Blackstone or griddle to medium heat. Add some cooking oil and the chicken. Cook 9 to 12 minutes, flipping a few times. Place the burger buns, cut side down, on the griddle for a minute to toast them.
Add cheese over the chicken, cover with a lid or melting dome until cheese is melted.
Assemble the sandwiches with cheesy chicken on the buns with toppings of choice such as mayo, lettuce, tomato, cheese, more pickles, also see notes for another sauce option.
Notes
