Blackstone Pickle Brined Chicken Sandwiches
Sandwiches are one of the easiest dinners around, and these Blackstone Pickle Brined Chicken Sandwiches are perfect if your family loves pickles as much as mine!
I brined 4 chicken breasts (or chicken thighs would be even better) overnight in pickle juice and brown sugar… that’s it, that’s all the prep work!
How to make Blackstone Pickle Brined Chicken Sandwiches
First preheat your Blackstone or flat top griddle over medium heat.
Add some cooking oil of choice and the chicken that has been removed from the brine and patted dry.

I seasoned one side of the chicken with this Blackstone Dill Pickle Chicken seasoning, and then seasoned the other side once it was sizzling away on the griddle.
But really any seasoning blend will work just fine.

Cook the chicken 9 to 12 minutes, flipping a few times.

And add some sliced or shredded cheese to melt over top at the end.
I also toasted my burger buns right on the griddle for a minute.

Assemble your sandwiches on the toasted buns with the cheesy chicken and toppings of choice.
I went with more pickles, lettuce, and mayo… but you could also make a Dill Pickle Parmesan Sauce!
Just combine some mayo, chopped pickles, ranch seasoning blend, and shredded parmesan in a bowl, amounts depending on your preference.

Blackstone Pickle Brined Chicken Sandwiches
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 4 boneless, skinless chicken thighs or chicken breasts
- 1 cup leftover pickle juice/ brine
- 3 tablespoons brown sugar
- seasoning blend of choice (I used Blackstone Dill Pickle Chicken seasoning)
- cooking oil of choice
- 4 burger buns
- 4 slices cheese of choice (or shredded cheese of choice)
- Toppings of choice: mayo, lettuce, tomato, cheese, more pickles, see notes for another sauce option
Instructions
- Place the chicken in a gallon size plastic bag. Add the pickle juice and brown sugar. Massage the bag until the brown sugar is dissolved. Place in a large bowl (in case of a leak) and into the fridge for 24 hours.
- Remove the chicken from the bag, discard the bag and brine. Pat the chicken dry with paper towels. Sprinkle both sides lightly with seasoning blend of choice.
- Preheat your Blackstone or griddle to medium heat. Add some cooking oil and the chicken. Cook 9 to 12 minutes, flipping a few times. Place the burger buns, cut side down, on the griddle for a minute to toast them.
- Add cheese over the chicken, cover with a lid or melting dome until cheese is melted.
- Assemble the sandwiches with cheesy chicken on the buns with toppings of choice such as mayo, lettuce, tomato, cheese, more pickles, also see notes for another sauce option.
