Blackstone Pork Belly McRib Sandwich is my spin on a McDonald's classic, starting in the smoker or pellet grill and seared on the griddle!

Ingredients
  

  • 8 slices pork belly about 3/4 inch thick
  • BBQ seasoning blend of choice
  • BBQ sauce
  • 4 mini hoagy or sub buns
  • pickles, chopped onions

Instructions
 

  • Season the pork belly slices on all sides with BBQ seasoning.
  • Place in your smoker or pellet grill set to 250 degrees for 3 hours, flipping halfway through. Or place on a lined baking sheet in a 250 degree oven for 3 hours, flipping halfway through.
  • Preheat your griddle to medium high. Add cooking oil of choice and cook the pork belly slices 1 1/2 to 2 minutes per side. Brush with BBQ sauce during the last 45 seconds.
    Note: I toasted my sub buns, cut side down, on the griddle for a few seconds.
  • Serve on toasted mini sub buns with more BBQ sauce, pickles, and chopped onions.
