Blackstone Pork Belly McRib Sandwich
We are recreating a classic, but with an elevated twist today… we all know and love the McDonald’s McRib sandwich, well it’s getting an upgrade with this recipe for a Blackstone Pork Belly McRib Sandwich!
That’s right, swapping out the rib with pork belly that starts in the Traeger pellet grill or smoker, and then seared and charred on the Blackstone flat top griddle.
How to make Blackstone Pork Belly McRib Sandwich
Season 8 slices of pork belly on all sides with your favorite BBQ seasoning blend.
Then place in your smoker or pellet grill set to 250 degrees for 3 hours, flipping halfway through.
Or place on a lined baking sheet in a 250 degree oven for 3 hours, flipping halfway through.

Just like this the pork belly is so tender and flavorful… but in my life I need a good sear with lots of char to make this dish complete.

So next stop is your Blackstone or flat top griddle.
Preheat your griddle to medium high.
Add cooking oil of choice and cook the pork belly slices 1 1/2 to 2 minutes per side.
Brush with BBQ sauce during the last 45 seconds.

Now we assemble our sandwiches on toasted mini sub buns!
Two slices of pork belly per sandwich and top with BBQ sauce, pickles, and chopped onions.

Blackstone Pork Belly McRib Sandwich
Equipment
- Traeger/Pellet Grill
- Smoker
- Flat Top Grill/ Griddle
Ingredients
- 8 slices pork belly about 3/4 inch thick
- BBQ seasoning blend of choice
- BBQ sauce
- 4 mini hoagy or sub buns
- pickles, chopped onions
Instructions
- Season the pork belly slices on all sides with BBQ seasoning.
- Place in your smoker or pellet grill set to 250 degrees for 3 hours, flipping halfway through. Or place on a lined baking sheet in a 250 degree oven for 3 hours, flipping halfway through.
- Preheat your griddle to medium high. Add cooking oil of choice and cook the pork belly slices 1 1/2 to 2 minutes per side. Brush with BBQ sauce during the last 45 seconds.Note: I toasted my sub buns, cut side down, on the griddle for a few seconds.
- Serve on toasted mini sub buns with more BBQ sauce, pickles, and chopped onions.
