1poundpork sausage (either country or Italian sausage, chicken or turkey sausage works too)

2apples (I used Honeycrisp)diced, skin on
5cupschopped, fresh spinach
1tablespoondried or fresh thyme
1tablespoonpaprika
2teaspoonsground cumin
1teaspoonground cinnamon
1/4cupmaple syrup
Optional: sliced green onions, crushed red pepper flakes
Instructions
Prepare all of your ingredients and place on a tray to carry outside to the griddle. Preheat to medium heat for several minutes.
Add some cooking oil of choice along with the diced sweet potatoes. Season with kosher salt and pepper. Cover with a melting dome and add some of the chicken broth, cook for 8 to 9 minutes. During this time remove the dome and flip with hibachi spatulas 2 or 3 times, adding a little more chicken broth each time (be sure to save about 1/3 cup of the broth for later).
Remove the melting dome. Add more cooking oil to an empty space on the griddle and add the sausage and onion. Cook 3 to 4 minutes, flipping a few times and breaking apart the sausage with the spatulas. Flip and mix the sweet potatoes a few times as well.
Combine everything on the griddle and add the apples, spinach, thyme, paprika, cumin, cinnamon, more kosher salt, and pepper. Cook 4 to 5 minutes, flipping a few times.
Add the maple syrup, the rest of the chicken broth, green onions and crushed red pepper flakes if using and combine everything together. Cook another minute or two. Taste for seasoning and add more kosher salt and pepper if needed.
