Ingredients
  

  • 6 eggs
  • kosher salt, pepper
  • 3 tablespoons butter
  • 1 teaspoon Blackstone Lumberjack breakfast blend seasoning (optional)
  • 1 cup shredded cheese of choice
  • 8 soft taco size soft flour tortillas
  • 2 cups sausage gravy (homemade or canned)

Instructions
 

  • Crack the eggs in a bowl. Add kosher salt and pepper, beat with a fork until combined.
  • Preheat griddle to medium low. Add butter and once melted slowly pour eggs on griddle, using spatulas to keep them contained (and add breakfast blend seasoning if using). Scramble and cook 2 to 3 minutes. Add cheese and combine with spatulas until melted.
  • Remove eggs. Add tortillas for a few seconds to warm them. Spread some sausage gravy in center of each tortilla, add some cheesy eggs, fold sides in and roll burritos tightly.
  • Place burritos back on the Blackstone, still over medium low heat, seam side down for 1 to 2 minutes per side until crisped how you prefer.
