Ingredients
  

Blackstone Shrimp Boil Fried Rice

  • cooking oil of choice
  • 8 cups cooked and cooled Jasmine rice
  • 3 eggs
  • 4 ears corn on the cob kernels cut off the cob
  • 1 onion diced
  • 2 pounds jumbo shrimp peeled and deveined
  • 1 pound smoked sausage diced
  • 6 to 8 cloves garlic minced
  • 1 1/2 tablespoons Old Bay seasoning
  • 1/2 cup soy sauce
  • 4 tablespoons butter
  • 2 tablespoons lemon juice
  • 1 bunch green onions sliced
  • Optional: potato sticks (snack aisle of grocery store), sriracha

Old Bay Yum Yum Sauce

  • 1 cup mayo
  • 1/4 cup ketchup
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 3/4 tablespoon Old Bay seasoning

Instructions
 

Blackstone Shrimp Boil Fried Rice

  • Prepare all of the ingredients, put them on a tray, and head out to the griddle. Preheat the griddle to medium high for a few minutes.
  • Add some cooking oil of choice. Put the cooked rice on one side of the griddle and crack the eggs over the rice. Put the corn and onion on the other side of the griddle.
  • Mix the rice and eggs together, and mix the corn and onion together... but keep the rice and veggies separate on the griddle. Cook both 3 to 4 minutes, then mix them all together with hibachi spatulas, move to one side of the griddle.
  • Add some more oil to the empty side of the griddle and add the shrimp, sausage, garlic, and Old Bay. Cook and mix both together on the griddle another 2 to 3 minutes, keeping them separate.
  • Mix everything together on the griddle then add the soy sauce, butter, lemon juice, and green onions. Cook and mix together with hibachi spatulas for 5 to 6 more minutes.
    Note: For crispier rice, use the hibachi spatulas to lay the rice flat and press the rice on the griddle.
  • Serve with potato stick over top and sriracha if desired and with the Old Bay yum yum sauce.

Old Bay Yum Yum Sauce

  • Mix all ingredients together and serve with the fried rice.
