- 1 pound ground chicken
- 1 tablespoon garlic and herb seasoning blend (I used Kinders)
- kosher salt, pepper
- cooking oil of choice
- 6 cups fresh chopped spinach
- 1/2 cup sliced sundried tomatoes
- 6 cloves garlic minced
- 3/4 cup heavy cream
- 8 soft taco size flour tortillas
- 1 1/2 cups shredded mozzarella cheese
Put the chicken in a bowl with the garlic and herb seasoning, salt, and pepper. Mix with your hands and roll into 8 balls, place them on a tray.
Preheat griddle to medium. Add some cooking oil of choice, spinach, sun dried tomatoes, garlic, kosher salt, and pepper. Cook 2 to 3 minutes and pour the heavy cream over top. Cook 1 more minute, mixing together, remove, and set aside. Scrape griddle clean if needed.
Add more cooking oil and place balls of chicken on the griddle spaced apart. Cover each with a tortilla and use a burger press to smash them flat.
Cook 4 minutes, flip, and cook 1 to 2 more minutes. Add the spinach mixture to the griddle to warm if needed.
Top each smashed taco with the spinach mixture and mozzarella cheese to serve.
