Instructions
Boil the pasta according to package directions in salted water, drain and toss together with 1 cup of the marinara sauce, kosher salt, pepper, Italian seasoning, and garlic powder.
Roll the Italian sausage into 6 balls. Set them on a tray with the cheese, pasta, remaining pasta sauce, and tortillas. Bring everything out to the griddle.
Preheat the griddle to medium heat for several minutes. Add some butter or cooking oil and place the balls of Italian sausage, spaced apart. Place a soft tortilla over each, use a burger press or heavy, flat object (I used a small cast iron skillet), to press the tortilla down, flattening the sausage underneath.
Cook 2 to 3 minutes, flip them over and add the mozzarella cheese, spaghetti in sauce, and a little more marinara sauce over each. Add optional toppings such as parmesan cheese, crushed red pepper flakes, and/or parsley.Note: Once you add the toppings, you can turn the griddle off as you wait for the cheese to melt.
