6eggsbeaten (I added 1/4 cup milk, optional)
8soft taco size tortillas
2 to 3cupsshredded cheese of choice

Instructions
Preheat your griddle to medium for a few minutes. Add some cooking oil the steak, jalapenos, kosher salt, pepper, and steak seasoning. Cook 4 to 6 minutes, mixing a few times with hibachi spatulas. Remove from the griddle.
Lower the heat to medium low, add more cooking oil and slowly pour the eggs on the griddle a little at a time, season with kosher salt and pepper. Use your hibachi spatulas to contain the eggs, scramble them for a few minutes and remove from the griddle. Scrape your griddle if needed.
Add more cooking oil and 4 tortillas. Put some cheese on each tortilla, then the steak and jalapenos, eggs, more cheese, and top each with the remaining tortillas.
Flip them using your hibachi spatulas after a minute or so, and cook on the other side until the cheese is melted and the tortillas are crisped how you prefer. Serve with sour cream and hot sauce if desired.
