Blackstone Steak and Egg Quesadillas

I have a pretty great husband, so I made him some Blackstone Steak and Egg Quesadillas on the griddle for his breakfast this work week.

He is a steak lover so I went with the classic combo of steak and eggs.

And some jalapeno because he loves his spicy food.

This would make a great camping breakfast on the flat top or we always love breakfast for dinner ideas.

How to make Blackstone Steak and Egg Breakfast Quesadillas

First beat 6 eggs in a bowl, I added some milk too but that is optional.

I seasoned my eggs in the bowl, but you could also season them right on the griddle.

Then cut a pound of steak into bite size pieces.

Dice a few jalapenos, leaving some seeds in for spice if preferred.

Set out your tortillas and cheese on the same tray for easy transport to the griddle.

Preheat your griddle to medium heat for a few minutes.

Then add some cooking oil and the steak and jalapenos.

Season them with kosher salt, pepper, and steak seasoning blend.

This will cook 4 to 6 minutes, then remove with your hibachi spatulas.

Lower the heat to medium low, add more cooking oil, and the eggs.

I like to add my eggs a little at a time, use the spatulas to contain the eggs, and scramble until cooked how I like.

Give your griddle a little scrape, add more cooking oil, and lay down 4 tortillas.

Build them on the griddle starting with cheese, the steak and jalapenos, and eggs.

Add more cheese and top each with another tortilla.

Flip them after a minute or so and cook on the other side until the cheese is melted and the tortillas are cooked how you like.

Blackstone Steak and Egg Quesadillas

Blackstone Steak and Egg Quesadillas are a great breakfast idea on the griddle or a perfect breakfast for dinner recipe on the flat top!

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 pound steak of choice cut into bite size pieces
  • 3 jalapeno peppers diced, seeds removed or leave some in for spice
  • kosher salt, pepper, steak seasoning blend
  • 6 eggs beaten (I added 1/4 cup milk, optional)
  • 8 soft taco size tortillas
  • 2 to 3 cups shredded cheese of choice
  • Optional: sour cream, hot sauce

Instructions
 

  • Preheat your griddle to medium for a few minutes. Add some cooking oil the steak, jalapenos, kosher salt, pepper, and steak seasoning. Cook 4 to 6 minutes, mixing a few times with hibachi spatulas. Remove from the griddle.
  • Lower the heat to medium low, add more cooking oil and slowly pour the eggs on the griddle a little at a time, season with kosher salt and pepper. Use your hibachi spatulas to contain the eggs, scramble them for a few minutes and remove from the griddle. Scrape your griddle if needed.
  • Add more cooking oil and 4 tortillas. Put some cheese on each tortilla, then the steak and jalapenos, eggs, more cheese, and top each with the remaining tortillas.
  • Flip them using your hibachi spatulas after a minute or so, and cook on the other side until the cheese is melted and the tortillas are crisped how you prefer. Serve with sour cream and hot sauce if desired.
