1 1/2poundsboneless, skinless chicken breasts or thighssliced
kosher salt, pepper, fajita or taco seasoning blend (I used Blackstone Tequila Lime and Fajita seasoning blends)
4clovesgarlicminced
1(10-ounce) containerstore bought street corn dip (or leftover homemade)warmed
12fajita or taco size flour tortillas.
1/2cupcrumbled cotija cheese
1cupchopped, fresh cilantro
Optional: hot sauce, lime wedges, pickled red onions
Instructions
Preheat griddle to medium. Add cooking oil of choice and the sliced peppers and onions. Cook 2 minutes, mixing with spatulas.
Add chicken, kosher salt, pepper, and fajita or taco seasoning to taste. Cook 6 minutes, mixing everything together with spatulas.
Add garlic and cook 2 more minutes, mixing a few times. Warm tortillas on empty space of Blackstone during the last minute.
Serve with chicken and veggies in the tortillas, top each with a dollop of street corn dip, cotija cheese, and cilantro. Add optional toppings such as hot sauce, lime wedges, and/or pickled red onions.
