Blackstone Street Corn Chicken Fajitas

What do you get when you combine Mexican street corn with griddled chicken and peppers? You get a delicious creation of Blackstone Street Corn Chicken Fajitas!

We are making this griddle dinner super simple by using store-bought street corn dip, or you could use leftover Blackstone Mexican Street Corn Dip!

How to make Blackstone Street Corn Chicken Fajitas

First prepare all of your ingredients and place them on a tray to easily carry outside to your Blackstone.

I have 1 1/2 pounds of sliced chicken, either chicken breasts or thighs.

Also, a sliced onion, red pepper, and green pepper.

Minced garlic, flour tortillas, warmed street corn dip, and the Blackstone Tequila Lime and Fajita seasonings because I couldn’t decide which one I wanted to use more.

Plus, our street corn toppings of cilantro, cotija cheese, and a must for me are the pickled red onions!

First preheat your Blackstone or flat top griddle to medium heat.

Then add some cooking oil of choice along with the peppers and onions.

Cook them for about 2 minutes, mixing with spatulas a few times.

Next add the chicken, kosher salt, pepper, and whatever taco or fajita seasoning you like.

This was the perfect combo for me.

Cook this, mixing a few times, for about 6 minutes.

Finally, some minced garlic joins the party.

And after about 2 minutes we are ready to build some fajitas!

Blackstone Street Corn Chicken Fajitas

I like to warm the tortillas on the griddle for a minute.

Then add the fajita mix and a dollop of whatever street corn dip you are using.

Top it off with the cilantro, cotija cheese, and pickled red onions and enjoy!

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 onion sliced
  • 1 red bell pepper sliced
  • 1 green pepper sliced
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs sliced
  • kosher salt, pepper, fajita or taco seasoning blend (I used Blackstone Tequila Lime and Fajita seasoning blends)
  • 4 cloves garlic minced
  • 1 (10-ounce) container store bought street corn dip (or leftover homemade) warmed
  • 12 fajita or taco size flour tortillas.
  • 1/2 cup crumbled cotija cheese
  • 1 cup chopped, fresh cilantro
  • Optional: hot sauce, lime wedges, pickled red onions

Instructions
 

  • Preheat griddle to medium. Add cooking oil of choice and the sliced peppers and onions. Cook 2 minutes, mixing with spatulas.
  • Add chicken, kosher salt, pepper, and fajita or taco seasoning to taste. Cook 6 minutes, mixing everything together with spatulas.
  • Add garlic and cook 2 more minutes, mixing a few times. Warm tortillas on empty space of Blackstone during the last minute.
  • Serve with chicken and veggies in the tortillas, top each with a dollop of street corn dip, cotija cheese, and cilantro. Add optional toppings such as hot sauce, lime wedges, and/or pickled red onions.
