- cooking oil of choice
- 1 large red onion sliced
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 4 to 6 ears corn on the cob kernels cut off the cob
- 4 pounds boneless, skinless chicken thighs cut into bite size pieces
- 2 medium zucchini sliced
- 1 pint cherry or grape tomatoes
- kosher salt, pepper, BBQ seasoning blend
- 8 cloves garlic minced
Preheat your griddle to medium. Add cooking oil, red onion, bell peppers. corn kernels, chicken, zucchini, and tomatoes. Season well with plenty of kosher salt, pepper, and BBQ seasoning. Cook 9 to 10 minutes, mixing a few times with spatulas.
Add garlic and cook 2 to 3 more minutes, mixing it all together. Taste for seasoning and add more kosher salt, pepper, and/or BBQ seasoning if needed.
