Ingredients
  

  • cooking oil of choice
  • 1 large red onion sliced
  • 1 red bell pepper sliced
  • 1 orange bell pepper sliced
  • 4 to 6 ears corn on the cob kernels cut off the cob
  • 4 pounds boneless, skinless chicken thighs cut into bite size pieces
  • 2 medium zucchini sliced
  • 1 pint cherry or grape tomatoes
  • kosher salt, pepper, BBQ seasoning blend
  • 8 cloves garlic minced

Instructions
 

  • Preheat your griddle to medium. Add cooking oil, red onion, bell peppers. corn kernels, chicken, zucchini, and tomatoes. Season well with plenty of kosher salt, pepper, and BBQ seasoning. Cook 9 to 10 minutes, mixing a few times with spatulas.
  • Add garlic and cook 2 to 3 more minutes, mixing it all together. Taste for seasoning and add more kosher salt, pepper, and/or BBQ seasoning if needed.
