
Blackstone Summer BBQ Chicken Stir Fry
My youngest son and I are making a budget friendly griddle meal, feeding our family of 8 for only $20.00!! Here’s how we made Blackstone Summer BBQ Chicken Stir Fry!
My husband and I have 6 kids, but this sweet boy is the only one who’s still at home.
The 23, 25-, 26-, 29-, and 32-year-old kids still come over often, especially in the summer for pool parties and yummy food.
This delicious and healthy meal won’t break the bank feeding all 8 of us!
AND the large Blackstone makes this super easy to prepare and clean!

Here’s the grocery receipt to prove it.
To be fair this was before tax, and I already had the cooking oil, kosher salt, pepper, and BBQ seasoning blend.

How to make Blackstone Summer BBQ Chicken Stir Fry
Start with the Blackstone or flat top griddle over medium heat.
Add some cooking oil of choice, 4 pounds diced chicken thighs, a sliced red onion, a sliced red and orange bell pepper, and 4 ears of corn kernels.
Season well with kosher salt, pepper, and BBQ seasoning.

Also add 2 sliced zucchini and a pint of cherry or grape tomatoes.

Mix this together with spatulas and cook for 9 to 10 minutes.

Then add some minced garlic.
Don’t be shy with the garlic or the BBQ seasoning, this is a TON of food!

Continue mixing and cooking for a few more minutes.
THIS is the face of a teenager when you ask him if he will help you with cleaning up this meal 😉
New flash… he DID help clean and agreed the Blackstone is super easy and waaaayyyyy better than doing dishes!

Blackstone Summer BBQ Chicken Stir Fry
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 large red onion sliced
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 4 to 6 ears corn on the cob kernels cut off the cob
- 4 pounds boneless, skinless chicken thighs cut into bite size pieces
- 2 medium zucchini sliced
- 1 pint cherry or grape tomatoes
- kosher salt, pepper, BBQ seasoning blend
- 8 cloves garlic minced
Instructions
- Preheat your griddle to medium. Add cooking oil, red onion, bell peppers. corn kernels, chicken, zucchini, and tomatoes. Season well with plenty of kosher salt, pepper, and BBQ seasoning. Cook 9 to 10 minutes, mixing a few times with spatulas.
- Add garlic and cook 2 to 3 more minutes, mixing it all together. Taste for seasoning and add more kosher salt, pepper, and/or BBQ seasoning if needed.
