Preheat griddle to medium. Add cooking oil, sweet potatoes, kosher salt, pepper, taco seasoning, and squirt some water over top. Cover with melting dome for 8 to 9 minutes. Remove dome a few times to mix with spatulas and add more water before covering again.
Set dome aside and add ground turkey and plenty of taco seasoning to empty space on griddle. Cook both the turkey and potatoes 5 to 8 more minutes, mixing sweet potatoes a few times and breaking apart the turkey with spatulas.
Put the sweet potatoes and turkey in separate containers, store in the fridge, and use them in your own meal prep or see post above for 4 healthy, high protein meals I made with them and my high protein creamy taco sauce.
