Blackstone Turkey Taco Sweet Potato Meal Prep

Welcome to another one of my griddle meal planning series… this time I have 4 meals to share with you that I made cooking only once in this Blackstone Turkey Taco Sweet Potato Meal Prep Series!

We are starting with 2 to 3 pounds of Jennie-O ground turkey and 2 to 3 diced sweet potatoes.

The amount really depends on how many people you are meal prepping for.

Another part of this meal prep series, and an added boost of protein to each of the four meals is this High Protein Creamy Taco Sauce!

So, when you are meal prepping the turkey and sweet potatoes, be sure to make a big batch of this sauce as well.

High Protein Creamy Taco Sauce

How to make Blackstone Turkey Taco Sweet Potato Meal Prep

First preheat your Blackstone or flat top griddle to medium.

Add some cooking oil of choice, diced sweet potatoes, kosher salt, pepper, taco seasoning, and squirt some water over top.

Cover the taters with your melting dome for 8 to 9 minutes.

Remove the dome a few times to mix with spatulas and add more water before covering again.

Set the dome aside and add your ground turkey and plenty of taco seasoning to an empty space on the griddle.

Cook both the turkey and sweet potatoes 5 to 8 more minutes, mixing the sweet potatoes a few times and breaking apart the turkey with your spatulas.

Now you can turn Blackstone Turkey Taco Sweet Potato Meal Prep into any healthy creation you desire!

Put the sweet potatoes and turkey in separate containers and store in the fridge.

Blackstone Turkey Taco Protein Bowls

Take the sweet potatoes and turkey taco meat from this meal prep, warm them up and top with black beans, lettuce, cheese, avocado, and pickled onions.

But the key here is adding the High Protein Creamy Taco Sauce that I also made a big batch of to add to alllll of these yummy meals!

If you are not making this sauce, you could easily add sour cream, salsa, or any taco sauce of choice.

You don’t have to make yours crispy on the griddle, but I wanted a little crunch.

Stuffing warm tortillas with the same filling is perfectly acceptable 🙂

I set my Blackstone over medium low heat and placed 6 soft taco size flour tortillas flat.

Then added cheese to entire tortilla, and added black beans (leftover from the turkey protein bowls), sweet potatoes and turkey taco meat from this meal prep to one side of each tortilla along with lime juice, cilantro, and the High Protein Creamy Taco Sauce.

Flip and cook on the griddle until crisped to your liking.

High Protein Turkey Taco Stuffed Avocado

Simply hollow out juuuust a little from each avocado half (I did add the extra avocado to my plate).

Season avocado halves with kosher salt, pepper, and lime juice.

Then stuff with the warmed taco meat from this meal prep, cheese, cilantro, and of course that High Protein Creamy Taco Sauce!

This is one Taylor Farms Salad Kit, I used the Mexican Street Corn kit.

Divide between two meal prep containers and top with the taco meat from this meal prep along with black beans (I used the remaining beans from my protein bowls and tacos), cheese, cilantro, and the topping packet from the salad kit.

Then mix the dressing packet with the High Protein Creamy Taco Sauce and put them in cups on the side.

You could also add an avocado right before enjoying these!
