Ingredients
  

  • cooking oil of choice
  • 8 ounces mushrooms sliced
  • 1 red bell pepper sliced
  • 1 red onion sliced
  • 6 ounces spinach leaves chopped
  • 4 to 6 cloves garlic minced
  • kosher salt, pepper, crushed red pepper flakes, dried oregano (to taste)
  • 2 tablespoons balsamic vinegar or lemon juice
  • 2 extra large flour tortillas (I used Extreme Wellness Low Carb Tortillas)
  • 1/2 cup hummus
  • 1/2 cup feta cheese crumbles

Instructions
 

  • Preheat the griddle to medium heat for a few minutes. Add some cooking oil and the mushrooms, peppers, and onions. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
  • Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes. Mix in the balsamic vinegar or lemon juice and cook another minute on the griddle.
  • Scrape the griddle and turn the heat to low. Assemble the wraps with some hummus, veggies, and feta cheese in the center, roll them up like a burrito.
  • Add a little more cooking oil to the griddle and place the wraps, seam side down. Cook 1 to 2 minutes per side or until crisped how you prefer.
