- cooking oil of choice
- 8 ounces mushrooms sliced
- 1 red bell pepper sliced
- 1 red onion sliced
- 6 ounces spinach leaves chopped
- 4 to 6 cloves garlic minced
- kosher salt, pepper, crushed red pepper flakes, dried oregano (to taste)
- 2 tablespoons balsamic vinegar or lemon juice
- 2 extra large flour tortillas (I used Extreme Wellness Low Carb Tortillas)
- 1/2 cup hummus
- 1/2 cup feta cheese crumbles
Preheat the griddle to medium heat for a few minutes. Add some cooking oil and the mushrooms, peppers, and onions. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes. Mix in the balsamic vinegar or lemon juice and cook another minute on the griddle.
Scrape the griddle and turn the heat to low. Assemble the wraps with some hummus, veggies, and feta cheese in the center, roll them up like a burrito.
Add a little more cooking oil to the griddle and place the wraps, seam side down. Cook 1 to 2 minutes per side or until crisped how you prefer.
