
Blackstone Veggie Hummus Wraps
This is an incredible healthy meal for two made on the griddle, Blackstone Veggie Hummus Wraps is the perfect Meatless Monday dinner recipe!
I am not a vegetarian, but am trying to incorporate more plant based meals into my world.
Let me just say, if I got my steak loving husband to try and LOVE these, you know this is a magical recipe 😉
These are even low carb and Keto friendly because I used the Extreme Wellness wraps!

How to make Blackstone Veggie Hummus Wraps
First slice your veggies and put them on a tray to carry out to the griddle or flat top grill.
I have some mushrooms, a red bell pepper, and half of a red onion.
Also minced garlic and chopped, fresh spinach.

Preheat your Blackstone or any brand griddle to medium heat for a few minutes.
Then add some cooking oil of choice along with the mushrooms, peppers, and onions.
Cook for 3 to 4 minutes, mixing it all together with hibachi spatulas.

Then add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano.
And cook another 3 to 4 minutes.
Finally, mix in either balsamic vinegar or lemon juice and cook another minute.
Then remove the veggie mix to make the wraps.

I scraped my griddle and lowered the heat while I made the wraps.

Lay each large tortilla flat and spread some hummus, pile on LOTS of veggies, and top with feta.
Then roll them up like burritos.

Add a little more oil to the griddle and place them seam side down.
They will take a minute or two per side, really depending on how crisp you want them.

I garnished mine with some basil too!

Blackstone Veggie Hummus Wraps
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 8 ounces mushrooms sliced
- 1 red bell pepper sliced
- 1 red onion sliced
- 6 ounces spinach leaves chopped
- 4 to 6 cloves garlic minced
- kosher salt, pepper, crushed red pepper flakes, dried oregano (to taste)
- 2 tablespoons balsamic vinegar or lemon juice
- 2 extra large flour tortillas (I used Extreme Wellness Low Carb Tortillas)
- 1/2 cup hummus
- 1/2 cup feta cheese crumbles
Instructions
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil and the mushrooms, peppers, and onions. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
- Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes. Mix in the balsamic vinegar or lemon juice and cook another minute on the griddle.
- Scrape the griddle and turn the heat to low. Assemble the wraps with some hummus, veggies, and feta cheese in the center, roll them up like a burrito.
- Add a little more cooking oil to the griddle and place the wraps, seam side down. Cook 1 to 2 minutes per side or until crisped how you prefer.
