- cooking oil of choice
- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 1 pint grape tomatoes
- kosher salt, pepper, crushed red pepper flakes
- 1 teaspoon lemon pepper seasoning
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 (4-pack) bags mini naan bread
- 1/2 cup tzatziki
- 1/2 cup shredded lettuce
- 1/2 cup crumbled feta
Preheat griddle to medium. Add cooking oil of choice, chicken, tomatoes, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, mixing with spatulas.
Add lemon pepper seasoning, oregano, paprika, and garlic powder. Cook 5 more minutes, mixing a few times.
During the last minute, add naan bread to empty space on griddle to warm and toast them.
Assemble gyros in the naan bread with some chicken and tomatoes, tzatziki, lettuce, and feta cheese.
