Flat Top Grill/ Griddle
- cooking oil of choice
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 8 ounces mushrooms sliced
- 6 ounces fresh spinach roughly chopped
- 4 to 6 cloves garlic
- kosher salt, pepper, crushed red pepper flakes
- 1/2 tablespoon oregano
- 2 tablespoons balsamic vinegar
- Optional: feta cheese, basil
Preheat the griddle to medium heat for a few minutes. Add the cooking oil along with the peppers, onions, and mushrooms. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes, mixing together.
Add the balsamic vinegar and cook another 1 to 2 minutes. Serve with feta cheese and basil over top if desired.
