Griddle Mediterranean Vegetables
Whether you are looking for an easy side dish or a hearty vegetarian meal on the Blackstone or flat top grill, these Griddle Mediterranean Vegetables are a must try!
A simple side dish with chicken or steak, serve them with quinoa for a meatless meal, or just with a side of pita or naan bread for a light summer dinner.
You gotta eat your veggies, right?!
Might as well enjoy them like this… packed with flavor and cooked perfectly (oh, and topped with feta cheese)!
How to make Griddle Mediterranean Vegetables
First slice some mushrooms, a red pepper, and half of a red onion.
Also roughly chop your spinach and mince the garlic.
Then put everything on a tray to easily carry out to your Blackstone griddle or flat top grill.
You can even use the same tray to bring the veggies to the table to serve.
Preheat to medium for a few minutes, then add some cooking oil of choice along with the mushrooms, peppers, and onions.
These will cook for 3 to 4 minutes, just mix and flip them a few times with hibachi spatulas.
Next add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano.
And cook another 3 to 4 minutes.
Finally, add 2 tablespoons of balsamic vinegar and cook another minute or so, mixing together with hibachi spatulas.
Top Griddle Mediterranean Veggies with feta cheese and basil if desired 🙂

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 8 ounces mushrooms sliced
- 6 ounces fresh spinach roughly chopped
- 4 to 6 cloves garlic
- kosher salt, pepper, crushed red pepper flakes
- 1/2 tablespoon oregano
- 2 tablespoons balsamic vinegar
- Optional: feta cheese, basil
Instructions
- Preheat the griddle to medium heat for a few minutes. Add the cooking oil along with the peppers, onions, and mushrooms. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
- Add the spinach, garlic, kosher salt, pepper, crushed red pepper flakes, and oregano. Cook another 3 to 4 minutes, mixing together.
- Add the balsamic vinegar and cook another 1 to 2 minutes. Serve with feta cheese and basil over top if desired.
