2tablespoonssoy sauce
1 1/2tablespoonsbrown sugar
4clovesgarlicfinely minced
2teaspoonsground cinnamon
2teaspoonsChinese five spice powder
a few drops red food coloring
3/4cupmayo
Optional: rice, sriracha
Instructions
Trim the chicken if needed and place in a gallon size plastic bag.
Add the rest of the ingredients (except the mayo) to a bowl and stir until combined. Put the mayo in a separate bowl and add a few spoonfuls of the char siu sauce, stir and store in the fridge to use as a dipping sauce.
Pour the rest into the bag with the chicken and massage the bag until evenly coated. Marinate in the fridge overnight.
Preheat the grill or your Blackstone griddle to medium heat. Once hot, grill or griddle the chicken 5 to 6 minutes per side (add cooking oil first if using your griddle). Brush with any leftover marinade in the bag only during the first half of cooking time.
Serve with the dipping sauce from earlier and serve with rice and sriracha if desired.
