Equipment

  • Traeger/Pellet Grill
  • Smoker

Ingredients

  • 8 to 10 jalapenos
  • 1 8 ounce block cream cheese at room temp
  • 1 cup shredded cheese of choice
  • BBQ seasoning blend
  • 16 to 20 medium size shrimp peeled and deveined
  • 16 to 20 slices bacon (regular cut, not thick)

Instructions

  • Cut the jalapenos in half lengthwise. Scrape the seeds and white ribs out with a spoon.
Note: If you have sensitive skin gloves are recommended.
  • Put the cream cheese, shredded cheese, and some of the BBQ seasoning in a bowl. Stir until evenly mixed, this does take a minute or two but the room temp cream cheese helps.
  • Fill each jalapeno half with the cheesy mixture. Lightly season the shrimp with BBQ seasoning and top each popper with a shrimp.
  • Wrap a slice of bacon around each popper, overlapping slightly and tucking the bacon at the end if needed. Sprinkle more BBQ seasoning over top.
  • Preheat the pellet grill or smoker to 250 degrees. Place the poppers on the grate for 2 hours.
