Smoker
- 8 to 10 jalapenos
- 1 8 ounce block cream cheese at room temp
- 1 cup shredded cheese of choice
- BBQ seasoning blend
- 16 to 20 medium size shrimp peeled and deveined
- 16 to 20 slices bacon (regular cut, not thick)
Cut the jalapenos in half lengthwise. Scrape the seeds and white ribs out with a spoon.Note: If you have sensitive skin gloves are recommended. Put the cream cheese, shredded cheese, and some of the BBQ seasoning in a bowl. Stir until evenly mixed, this does take a minute or two but the room temp cream cheese helps.
Fill each jalapeno half with the cheesy mixture. Lightly season the shrimp with BBQ seasoning and top each popper with a shrimp.
Wrap a slice of bacon around each popper, overlapping slightly and tucking the bacon at the end if needed. Sprinkle more BBQ seasoning over top.
Preheat the pellet grill or smoker to 250 degrees. Place the poppers on the grate for 2 hours.
