Ingredients
  

  • 12 to 16 jalapenos
  • 1 pound ground Italian sausage
  • 1 onion diced
  • 8 ounces cream cheese
  • 1 cup shredded cheese of choice
  • kosher salt, pepper, seasoning blend of choice (I used a Cajun seasoning)

Instructions
 

  • Cut the jalapenos in half lengthwise and remove the seeds and white parts. Use kitchen gloves to protect your hands if desired.
  • Set a skillet (or your outdoor flat top griddle) over medium heat. Add the sausage and onion, cook 6 to 7 minutes breaking apart the sausage as it cooks.
  • Put the sausage in a bowl along with the cream cheese, shredded cheese, kosher salt, pepper, and seasoning blend. Mix until combined.
  • Stuff each jalapeno half with the filling. Set the smoker or pellet grill to 250 degrees. Place the jalapenos on the grill grate for 1 1/2 to 2 hours.
