Ingredients
  

  • 1 8 ounce log goat cheese (or 8 ounce block of cream cheese)
  • 1/4 cup honey
  • 1/3 cup pistachios roughly chopped
  • 1/3 cup dried cranberries
  • fresh thyme leaves
  • kosher salt, pepper
  • crackers, French bread slices, or crostini

Instructions
 

  • Put the goat cheese log (or cream cheese) on a plate.
  • Place the plate with the goat cheese on a smoker or pellet grill set to 180 degrees for 1 1/2 hours.
  • Drizzle the honey over top and add the pistachios, cranberries, some fresh thyme leaves, kosher salt, and pepper over top. It's ok if some of the toppings fall onto the plate.
  • Serve the dip right away while still warm with crackers, French bread slices, and/or crostini.
