BBQ seasoning and/or Fireball seasoning (I got mine from Amazon)
2/3cupFireball Whiskey
2 1/2cupsBBQ sauce (store bought or homemade)
your favorite hot sauce
Instructions
Pat the ribs dry with a paper towel, and season all sides with BBQ seasoning or Fireball seasoning (add kosher salt and pepper if it's a salt free rub, I did a mix of both seasonings).
Place the ribs in a smoker or pellet grill set to 225 degrees for 3 hours.
Wrap each rib rack in foil and add 2 tablespoons of the Fireball to each foil packet. Place the foil wrapped ribs back into the smoker for 2 more hours.Note: Heat resistant gloves and a rib wrapping buddy makes this process go a little smoother.
Put the BBQ sauce, a few dashes of hot sauce, and the remaining Fireball in a saucepan. Bring to a boil for a minute, stirring a few times, and remove from the heat.
Unwrap the ribs, place back on the smoker for 1 more hour, brushing with the Fireball BBQ sauce periodically. Serve with any leftover sauce.
