- 1 pound jumbo shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon Old Bay seasoning
- 1 tablespoon lemon juice
- 3 cloves garlic finely minced
- 3 tablespoons chopped, fresh herbs of choice (I used a mix of thyme, dill, and rosemary)

Pat the shrimp dry with paper towels and put them in a bowl. Add the olive oil, Old Bay, lemon juice, garlic, and fresh herbs. Toss until evenly mixed.
Set your smoker or pellet grill set to 250 degrees. Place the shrimp on the smoker grill grate for 30 to 40 minutes, flipping halfway through.
Serve with lemon wedges to squeeze over top.
