Smoked Lemon Herb Shrimp
Smoked Lemon Herb Shrimp is for sure one of the healthier recipes I have made on the smoker or Traeger pellet grill.
But that certainly doesn’t mean it’s boring… these shrimp are full of bright, fresh, delicious flavors!
They are great on their own, or use them to top salads, wraps, or heck maybe even a smoked shrimp po boy sandwich!
Bonus points for being Keto friendly and low carb, too!
How to make Smoked Lemon Herb Shrimp
To start, you’ll need a pound of peeled and deveined shrimp.
Also, some lemon wedges, garlic, olive oil, and fresh herbs.
I am growing thyme, rosemary, and dill so that’s what I used.
Really any fresh herbs will do just fine 🙂
Ahhh, and my secret seasoning weapon any time I am making seafood… Old Bay!
It’s just a magical combo of spices that makes my life so much easier because it’s already mixed and ready to go.
First, pat the shrimp dry with paper towels.
This will help all the yumminess stick.
Put them in a bowl and add some olive oil, lemon juice, Old Bay, minced garlic, and the fresh chopped herbs.
Then toss until the shrimp are evenly coated.
Next set the smoker or Traeger pellet grill to 250 degrees.
And place the shrimp right on the grill grate for 30 to 40 minutes, flipping halfway through.
Smoked Lemon Herb Shrimp smells heavenly as they do their thing on the smoker!
These truly do not need a sauce, but I wouldn’t judge if you dipped them in remoulade sauce or seafood sauce.
I do highly recommend serving them with lemon wedges to squeeze over top to add to the already bright flavor.

Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 1 pound jumbo shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon Old Bay seasoning
- 1 tablespoon lemon juice
- 3 cloves garlic finely minced
- 3 tablespoons chopped, fresh herbs of choice (I used a mix of thyme, dill, and rosemary)
- lemon wedges
Instructions
- Pat the shrimp dry with paper towels and put them in a bowl. Add the olive oil, Old Bay, lemon juice, garlic, and fresh herbs. Toss until evenly mixed.
- Set your smoker or pellet grill set to 250 degrees. Place the shrimp on the smoker grill grate for 30 to 40 minutes, flipping halfway through.
- Serve with lemon wedges to squeeze over top.
