1 1/2cupsstore bought or leftover spinach and artichoke dip (recipe link in post above for smoked spinach and artichoke dip)
kosher salt, pepper, Old Bay seasoning
Instructions
Butterfly the chicken breasts (slice them lengthwise to open them, but not sliced all the way through… picture example in post above).
Stuff the dip in each chicken breast and fold the top of the chicken over the filling (this works best if the dip is cold). Season all sides with kosher salt, pepper, and Old Bay seasoning.
Set your smoker or pellet grill to 225 degrees. Place the stuffed chicken on the grill grate for about 1 1/2 hours or until the internal temperature is above 165 degrees.Note: Cook time depends on size of chicken, start monitoring the internal temperature around the 1 hour mark and remove once they above 165 degrees.
