Smoked Spinach Artichoke Stuffed Chicken
This Smoked Spinach Artichoke Stuffed Chicken recipe turns a boring chicken dinner into something spectacular!
The smoky flavor from the Traeger pellet grill or smoker is amazing, but what really steals the show is the creamy, cheesy filling.
You can use a store bought spinach and artichoke dip, or make this Smoked Spinach and Artichoke Dip and save some leftovers for this chicken recipe.
How to make Smoked Spinach Artichoke Stuffed Chicken
Start with two large chicken breasts.
Butterfly them, which basically means to slice them almost all the way through, lengthwise.
Then stuff each with the spinach and artichoke dip, which works best if the dip is cold.
Just about 1 1/2 cups of the dip should fit perfectly for two large chicken breasts.
Fold the chicken closed and season all sides with kosher salt, pepper, and Old Bay seasoning.
Next stop is the Traeger pellet grill or smoker!
Set it to 225 degrees and put the stuffed chicken right on the grill grates.
Cook time will largely depend on the size of the chicken.
About 1 1/2 hours total, but monitor the internal temperature and remove them once it’s above 165 degrees.

Smoked Spinach Artichoke Stuffed Chicken
Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 2 large chicken breasts
- 1 1/2 cups store bought or leftover spinach and artichoke dip (recipe link in post above for smoked spinach and artichoke dip)
- kosher salt, pepper, Old Bay seasoning
Instructions
- Butterfly the chicken breasts (slice them lengthwise to open them, but not sliced all the way through… picture example in post above).
- Stuff the dip in each chicken breast and fold the top of the chicken over the filling (this works best if the dip is cold). Season all sides with kosher salt, pepper, and Old Bay seasoning.
- Set your smoker or pellet grill to 225 degrees. Place the stuffed chicken on the grill grate for about 1 1/2 hours or until the internal temperature is above 165 degrees.Note: Cook time depends on size of chicken, start monitoring the internal temperature around the 1 hour mark and remove once they above 165 degrees.
