Traeger 0 to 400 Chicken Thighs is a super simple pellet grill recipe that gets crispy chicken skin by using the 0 to 400 method!

Ingredients
  

  • 10 chicken thighs
  • 3 to 4 tablespoons dry rub or seasoning blend of choice
  • kosher salt, pepper (if needed depending on salt content of your seasoning blend)

Instructions
 

  • Pat the chicken dry very well with paper towels. Season the chicken on all sides with the dry rub or seasoning blend, and kosher salt and pepper if needed.
  • Place the thighs on your pellet grill skin side down, then turn your pellet grill on and set the temperature to 400 degrees. Set a timer right away for 50 minutes (when the pellet grill is still at 0 degrees).
  • Flip the chicken thighs using tongs, then set a timer for 20 to 30 more minutes. Check them, remove them once they are crisped how you prefer and the internal temperature is above 165 degrees.
    Note: You can flip them back to skin side down if needed to crisp or char the skin during the last 10 minutes.
