Traeger 0 to 400 Chicken Thighs
This recipe for Traeger 0 to 400 Chicken Thighs uses the “0 to 400 method” on your pellet grill to create flavorful chicken thighs with crispy skin!
I use this method often for chicken wings, so thought why not give it a whirl using thighs?!
Happy to report back that it was a success… and my family gave me a 5-star review with a standing ovation at dinner.
Ok, I made that last part up, but they really did enjoy these crispy smoked chicken thighs!
How to make Traeger 0 to 400 Chicken Thighs
I will walk you through this whole 0 to 400 method step by step 🙂
First pat your chicken thighs dry very well with paper towels.
I am making 10 thighs, but you can make as many as your heart desires.
Next season with any seasoning blend you like.
I mixed it up with half Caribbean Jerk seasoning and half garlic and herb seasoning.
Be sure to season all sides well and include some salt and pepper if needed based on the salt content of your seasoning blend.
Then place the chicken thighs, skin side down, on the grill grates of your Traeger or pellet grill while it is OFF… COLD… NOT TURNED ON YET.
That’s where the “0” comes from… like it’s set to 0 degrees.
Once they are on the pellet grill, close the lid, and turn the pellet grill on.
And set the temperature to 400 degrees (or 375 works depending on the model Traeger you have).
Then set a timer right away… like before the pellet grill preheats… for 50 minutes.
After 50 minutes, flip the chicken using tongs.
And let them cook another 20 to 30 minutes.
I started checking mine after 20 minutes for an internal temp of 165 degrees.
They were at 165, but I flipped them back on the skin side for a few more minutes for some extra char on that skin for a few more minutes.

I plan to make them again soon but with different seasoning blends like BBQ and maybe a Nashville Hot seasoning 🙂

Traeger 0 to 400 Chicken Thighs
Equipment
- Traeger/Pellet Grill
Ingredients
- 10 chicken thighs
- 3 to 4 tablespoons dry rub or seasoning blend of choice
- kosher salt, pepper (if needed depending on salt content of your seasoning blend)
Instructions
- Pat the chicken dry very well with paper towels. Season the chicken on all sides with the dry rub or seasoning blend, and kosher salt and pepper if needed.
- Place the thighs on your pellet grill skin side down, then turn your pellet grill on and set the temperature to 400 degrees. Set a timer right away for 50 minutes (when the pellet grill is still at 0 degrees).
- Flip the chicken thighs using tongs, then set a timer for 20 to 30 more minutes. Check them, remove them once they are crisped how you prefer and the internal temperature is above 165 degrees.Note: You can flip them back to skin side down if needed to crisp or char the skin during the last 10 minutes.
