Peach Filling
- 7 to 8 peaches (just ripe works best, or sliced frozen peaches, thawed)
- 1/2 cup sugar
- 1/2 cup pure maple syrup
- 1/2 cup bourbon
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- pinch of kosher salt
Crumble Topping
- 1 stick melted butter
- 1 cup flour
- 1/4 cup chopped pecans
- 1/2 cup sugar
- 1/2 cup brown sugar
- pinch of kosher salt
Cut the peaches into 1/4 inch thick slices, remove the pit but leave the skin on.
Place the peach slices in a large bowl and add the sugar, maple syrup, bourbon, flour, cornstarch, cinnamon, and kosher salt. Gently toss until evenly mixed and put in a greased 9x13 casserole dish.
Make the crumble topping by combining the melted butter, flour, pecan pieces, sugar, brown sugar, and salt. Stir until evenly mixed. Crumble it evenly over top of the peach filling.
Set your pellet grill to 375 degrees and put the peach crumble on the grill grate for 40 to 50 minutes. Let cool slightly before serving.
