Blackstone Chicken Zucchini and Corn
Blackstone Chicken Zucchini and Corn with Hot Honey Lime Vinaigrette is the perfect griddle recipe for when you have garden fresh veggies and want a healthy meal.
Grape or cherry tomatoes would be a great addition as well!
Let me just say the sweet and spicy dressing with the salty feta and crunchy veggies make this dish in my top 10 meals of all time 🙂

How to make Blackstone Chicken Zucchini and Corn
I made the hot honey lime dressing by whisking together olive oil, hot honey, lime juice, Dijon mustard, kosher salt, pepper, and all-purpose seasoning blend.
Then cut the kernels off of 4 ears corn on the cob and slice 2 small zucchini.

Preheat your Blackstone or flat top griddle to medium heat.
Then add cooking oil of choice along with the chicken, corn, and zucchini.
And season with kosher salt, pepper, and all-purpose seasoning blend.

Cook for about 5 minutes, mixing a few times with spatulas.
Then add plenty of minced garlic.

Another 4 minutes or so and then add the hot honey lime vinaigrette.

Mix for a few seconds and dinner is served 🙂

Top with fresh basil and crumbled feta for the ultimate experience and flavor explosion!

Blackstone Chicken Zucchini and Corn
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 tablespoons olive oil, plus more for cooking
- 2 tablespoons lime juice
- 2 tablespoons hot honey
- 1 tablespoon Dijon mustard
- kosher salt, pepper, all-purpose seasoning of choice (I used Blackstone All-Purpose seasoning)
- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 4 ears corn on the cob kernels cut off the cob
- 2 small zucchini (or one larger zucchini) sliced into half circles, 1/4 inch thick
- 6 cloves garlic minced
- 1/2 cup crumbled feta cheese
- fresh chopped basil
Instructions
- Put the olive oil, lime juice, hot honey, Dijon mustard, kosher salt, pepper, and all-purpose seasoning in a bowl and whisk until combined.
- Preheat your Blackstone griddle to medium heat. Add olive oil (or cooking oil of choice), chicken, corn kernels, zucchini, kosher salt, pepper, and all-purpose seasoning. Cook 5 minutes, mixing with spatulas a few times.
- Add garlic and cook 4 to 5 more minutes, mixing together. Add the hot honey lime dressing, toss until combined and remove from griddle.
- Serve topped with feta cheese and fresh basil.
