
Blackstone Hot Honey BBQ Chicken Quesadillas
You just can’t beat quesadillas cooked on the flat top griddle, and this recipe for Blackstone Hot Honey BBQ Chicken Quesadillas is one of the BEST!
A little spicy kick paired with sweet honey and smoky BBQ sauce… oh my I am drooling all over again just thinking about this griddle meal.
How to make Blackstone Hot Honey BBQ Chicken Quesadillas
The first thing I do when making any Blackstone recipe is prepare the ingredients and put them all on a tray to easily carry outside.
Then I use the same tray to carry the meal back inside, or to our picnic table.

Preheat the griddle to medium heat and add 1 1/2 pounds of diced chicken thighs (or chicken breasts).
Season with kosher salt, pepper, and BBQ seasoning blend.
Then cook for 6 minutes, mixing with spatulas a few times.

Next add some BBQ sauce and hot honey to the chicken.

Cook and mix a few more minutes and then remove the chicken.
Also, scrape the griddle clean and lower the heat to medium low.

Add more cooking oil and place 4 large, burrito size flour tortillas.
Sprinkle shredded cheese on one side of each tortilla.

Then add the hot honey BBQ chicken bites.

Another drizzle of both BBQ sauce and hot honey.
You could also sprinkle chopped cilantro as an optional addition.

Finally, more cheese!!
Fold the empty side of each tortilla over the filled side and cook until the cheese is melted and the tortillas are crispy golden brown.

Blackstone Hot Honey BBQ Chicken Quesadillas
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 pound boneless, skinless chicken thighs (or chicken breasts)
- kosher salt, pepper, BBQ seasoning blend
- 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
- 2 tablespoons hot honey (plus more to drizzle in quesadillas)
- 4 large burrito size flour tortillas
- 3 cups shredded cheese of choice
- 1/2 cup chopped cilantro (optional)
- Optional toppings: sour cream, jalapenos
Instructions
- Preheat griddle to medium. Add cooking oil, chicken, kosher salt, pepper, and BBQ seasoning. Cook 6 minutes, mixing a few times with spatulas.
- Add BBQ sauce and hot honey. Cook 2 more minutes, mixing together. Remove and scrape griddle clean and lower heat to medium-low.
- Add more cooking oil and lay the tortillas flat on griddle. Sprinkle half of the cheese on one side of each tortilla. Add chicken, drizzle a little more BBQ sauce and hot honey, add cilantro if using, and remaining cheese.
- Fold the empty side of each tortilla over the filled side and cook the quesadillas a minute or two per side. Remove once the cheese is melted and the tortillas are crisped how you prefer.
- Serve with sour cream and jalapenos if desired.
