Blackstone Stir Fry Veggie Noodles
I don’t think my family even realized that these Blackstone Stir Fry Veggie Noodles were a vegetarian recipe for the griddle!
I’ve been trying to incorporate a few more meatless meals into our weekly dinner rotation, but you could certainly add some chicken or shrimp if you’d like.
And these noodles were so packed full of flavor, plus loaded with lots of healthy vegetables!
I made an easy homemade stir fry sauce, but you could use some store bought stir fry sauce if preferred.
How to make Blackstone Stir Fry Veggie Noodles
First we will make the stir fry sauce.
Just put a can of veggie broth into a bowl along with soy sauce, rice vinegar, brown sugar, cornstarch, garlic, and ginger.
Then whisk together until evenly combined.
The sauce will be very thin, but will thicken once it hits the hot griddle thanks to the cornstarch.
Next prepare your vegetables and put everything on a tray to easily carry out to the griddle.
I had a bag of sugar snap peas and pre-sliced mushrooms.
So all I had to do was cut two carrots into matchstick pieces and slice a red pepper and an onion.
Also boil 10 ounces of rice noodles according to the package directions, rinse them with cold water, and put them on the tray with the veggies.
Preheat your Blackstone griddle or flat top grill to medium/ medium high heat for a few minutes.
Then add some cooking oil of choice along with all the veggies, kosher salt, and pepper.
Cook the veggies for 7 to 8 minutes, flipping and mixing with your hibachi spatulas a few times.
Then add the cooked rice noodles, some sriracha (optional for some spicy flavor), and half of the stir fry sauce.
Remember the sauce will be very thin, but will thicken as it hits the hot griddle.
Use your hibachi spatulas to mix it all together and slowly add more of the stir fry sauce until it’s gone.
Remove from the griddle once the sauce is thickened and it’s all combined.
Serve Blackstone Stir Fry Veggie Noodles with lime, chopped peanuts, and green onions if desired 🙂
Not too shabby for a simple vegetarian meal on the griddle, right?!

Blackstone Stir Fry Veggie Noodles
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
Stir Fry Sauce
- 1 14 ounce can vegetable broth
- 1/2 cup soy sauce
- 3 to 4 tablespoons brown sugar (depending how sweet you prefer)
- 3 tablespoons rice vinegar (or white vinegar)
- 2 tablespoons cornstarch
- 5 to 6 cloves garlic minced
- 1 tablespoon grated ginger or ginger paste
Blackstone Stir Fry Veggie Noodles
- 8 to 10 ounces rice noodles
- cooking oil of choice
- 2 carrots grated or cut into matchstick pieces
- 1 onion thinly sliced
- 1 red bell pepper thinly sliced
- 8 ounces sugar snap peas
- 8 ounces sliced mushrooms
- kosher salt, pepper
- 2 to 3 tablespoons sriracha (optional)
- stir fry sauce (recipe above or 16 ounce bottle of store bought stir fry sauce)
- Optional toppings: sliced green onions, chopped peanuts, lime wedges
Instructions
Stir Fry Sauce
- Put all ingredients in a bowl and whisk until combined. Whisk again right before adding it to the dish.
Blackstone Stir Fry Veggie Noodles
- Boil the rice noodles according to the package directions. Drain and rinse well with cold water.
- Prepare the rest of the ingredients and place everything on a tray to carry out to the griddle. Preheat the griddle to medium/ medium high heat.
- Add some cooking oil to the griddle along with the carrots, onion, red pepper, sugar snap peas, mushrooms, kosher salt, and pepper. Cook 7 to 8 minutes, flipping and mixing with hibachi spatulas.
- Add the cooked noodles, sriracha (if using), and half of the stir fry sauce. Cook 3 to 4 more minutes, adding a little more of the stir fry sauce at a time, mixing together with hibachi spatulas.Note: The stir fry sauce will be very thin at first, but will quickly thicken as it hits the heat from the griddle.
- Serve with green onions, chopped peanuts, and lime wedges if desired.
