Blackstone Mediterranean Breakfast Sandwiches

These Blackstone Mediterranean Breakfast Sandwiches were my entry in the 2025 Griddle Battle, and guess what?! This recipe won FIRST place!

I’m going to show you exactly how I made this tasty breakfast or brunch sandwich so you too can enjoy this award-winning dish 😉

How to make Blackstone Mediterranean Breakfast Sandwiches

First, preheat your Blackstone or flat top griddle to medium-low.

Add pancetta and cook 5 to 8 minutes, mixing with spatulas a few times.

Scoot the pancetta to the edge of your griddle when cooked to your liking.

Place 4 egg rings on the Blackstone griddle with a small piece of butter in each ring, once butter melts crack an egg into each egg ring.

Season with kosher salt and pepper, and a breakfast seasoning blend if you have one.

My secret weapon for winning was this Vittle Glitter by Griddle and Vittles with Nik and Jay… you can message them directly on their page to order some for yourself!

Add some feta and parmesan cheese over top each egg as well.

Add more butter to empty space on griddle and place 8 slices of sourdough bread to get toasty in the melted butter.

I cut mine into circles with a biscuit cutter but that’s optional, you could also just cut the crusts off.

Cook eggs and bread 2 to 5 minutes, flipping bread a few times.

Remove once bread and eggs are cooked to your liking.

Assemble sandwiches with pesto on bottom bread, pancetta, sun dried tomatoes, egg with cheese, and top piece of bread.

Garnish Blackstone Mediterranean Breakfast Sandwiches with more parmesan and chopped basil if desired.

  • Blackstone Griddle
  • Flat Top Grill/ Griddle
  • Silicone Egg Rings

Ingredients
  

  • 4 ounces diced pancetta
  • 4 tablespoons butter
  • 8 slices sliced sourdough bread crusts removed if desired, I cut mine in circle with a 3 1/2-inch biscuit cutter
  • 4 eggs
  • kosher salt, pepper, breakfast seasoning blend (optional… I used Vittle Glitter, link to purchase in post above)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup shredded parmesan cheese
  • 1/3 cup pesto
  • 1/4 cup sliced sun dried tomatoes
  • Optional: more parmesan, chopped basil

Instructions
 

  • Preheat your griddle to medium-low. Add pancetta and cook 5 to 8 minutes, mixing with spatulas a few times. Scoot to edge of griddle when cooked to your liking.
  • Place 4 egg rings on griddle with 1 tablespoon of the butter cut into fourths (1/4 tablespoon in each ring), once butter melts crack an egg into each egg ring. Season with kosher salt and pepper (plus breakfast seasoning blend if using) and add some feta and parmesan over top each egg.
  • Add remaining butter to empty space on griddle and place the bread to get toasty in the melted butter. Cook eggs and bread 2 to 5 minutes, flipping bread a few times. Remove once bread and eggs are cooked to your liking.
  • Assemble sandwiches with pesto on bottom bread, pancetta, sun dried tomatoes, egg with cheese, and top piece of bread. Garnish with more parmesan and chopped basil if desired.
