Blackstone Loaded Street Corn Chicken
Blackstone Loaded Street Corn Chicken is a healthy, easy, and oh so tasty dinner on the flat top griddle.
We are turning traditional Mexican street corn into a complete meal.
How to make Blackstone Loaded Street Corn Chicken
First let’s make the marinade and sauce by combining mayo, sour cream, garlic, chili powder, lime juice, ground red pepper, kosher salt, and pepper in a bowl.
Place 4 chicken breasts or thighs in a gallon size plastic bag, add a few spoonfuls of the mayo mixture to the bag and massage until chicken is coated.
Preheat your Blackstone or flat top griddle to medium heat.
Add cooking oil of choice to your entire griddle, place 4 ears corn on the cob and the chicken, and season chicken with more kosher salt and pepper.
Cook both about 10 minutes, flipping both chicken and corn a few times.

Remove and let cool slightly before cutting the corn kernels off the cob.
Put the corn kernels in a bowl and add remaining mayo mixture, cotija cheese, and cilantro.
Stir until evenly mixed.

Add the mayo mixture a little at a time until it’s the right consistency for your taste, you may not use all of the mayo mixture.

Serve the street corn on the chicken with lime wedges and Tajin on the side.

- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1/2 cup mayo
- 1/2 cup sour cream
- 1 tablespoon garlic paste or minced garlic
- 1 teaspoon chili powder
- 1 teaspoon lime juice
- 1/4 teaspoon ground red pepper
- kosher salt, pepper
- 4 thin cut boneless, skinless chicken breasts or thighs
- 4 ears corn on the cob shucked
- cooking oil of choice
- 1/2 cup crumbled cotija cheese
- 1/2 cup chopped cilantro
- lime wedges, Tajin seasoning
Instructions
- Put the mayo, sour cream, garlic, chili powder, lime juice, ground red pepper, kosher salt, and pepper in a bowl. Stir until evenly mixed.
- Place the chicken breasts in a gallon size plastic bag, add a few spoonfuls of the mayo mixture to the bag. Massage the bag until the chicken is evenly coated.
- Preheat your Blackstone griddle to medium heat. Add cooking oil on entire griddle, place corn on the cob and chicken, and season chicken with more kosher salt and pepper. Cook both about 10 minutes, flipping both chicken and corn a few times.
- Remove the chicken and corn from the griddle. Let the corn cool slightly and cut the kernels off the cobs.

- Serve the chicken topped with the street corn, with lime wedges and Tajin to add over top.
