Blackstone Lazy Beef Enchiladas
Blackstone Lazy Beef Enchiladas is an adapted recipe from my “I Love My Blackstone Griddle” Cookbook.
In my cookbook, which has 175 Blackstone recipes, is a chicken version of this same easy, budget friendly dinner.

How to make Blackstone Lazy Beef Enchiladas
Just open a few cans and put the ingredients on a tray to easily carry out to your griddle.

The only real prep work here is cutting 6 to 8 yellow corn tortillas into inch size pieces.

Preheat your Blackstone or flat top griddle to medium heat.
Then add some cooking oil of choice and cook up a pound of ground beef with kosher salt, pepper, and your favorite taco or seasoning blend.
And dump the tortillas and enchilada sauce right onto the griddle with the beef.

Also some corn, black beans, green chiles, sour cream, and more kosher salt, pepper, and taco or fajita seasoning.

Next up is the cheesy goodness!!

Mix it all together on the griddle and that’s it… Blackstone Lazy Beef Enchiladas are done!
We added some hot sauce and topped ours with Fritos for a little crunch 🙂

Blackstone Lazy Beef Enchiladas
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 pound ground beef
- kosher salt, pepper, taco or fajita seasoning blend
- 6 to 8 yellow corn tortillas cut into inch size pieces or strips
- 2 (10-ounce) cans green enchilada sauce
- 1 (4-ounce) can green chiles
- 1 (14-ounce) can corn drained
- 1 (14-ounce) can black beans drained and rinsed
- 1/2 cup sour cream
- 2 cups shredded cheese of choice
- Optional: hot sauce, Fritos or totilla chips
Instructions
- Preheat your Blackstone griddle to medium heat. Add cooking oil, ground beef, kosher salt, pepper, and taco or fajita seasoning. Cook 5 to 6 minutes, breaking it apart with spatulas.
- Add the tortillas, enchilada sauce, green chiles, corn, black beans, sour cream, more kosher salt, pepper and taco or fajita seasoning. Mix together and cook on the griddle for 2 to 3 minutes.
- Add half of the cheese, mix together, and top with remaining cheese. Remove the dish once cheese is melted (I just scooped mine onto a tray straight from the griddle).
- Top with hot sauce and Fritos or crushed tortilla chips if desired.
