Blackstone BBQ Chicken and Veggie Meal Prep
I’m not making an actual dinner on my griddle today, but I am hoping to offer some help on how to create a few healthy, easy dinners with this Blackstone BBQ Chicken and Veggie Meal Prep recipe.
We are cooking once on the large Blackstone cook space, packing it all up, and using it to make 4 dinners this week.
The dinner ideas you’ll find near the bottom of this post 🙂

How to make Blackstone BBQ Chicken and Veggie Meal Prep
I cut 4 pounds of chicken into bite size pieces, threw it all in a gallon size plastic bag, and seasoned it.
Also sliced a red and yellow bell pepper, plus a few jalapenos.
And cut the kernels off the cob from 2 ears of corn.
Add alllll of this to your Blackstone griddle over medium heat, keeping it separate.

The chicken was already seasoned, so I added kosher salt, pepper, and BBQ seasoning just to the veggies.
Cook it all on the griddle for 8 to 10 minutes, mixing a few times.

Drizzle some BBQ sauce and hot honey to the chicken during the last few minutes.
I actually only added sauce to half of my chicken since my son isn’t a huge sauce fan.

Just remove all of this yumminess when it’s done.
And pack in covered containers to store in the fridge until ready to use.

Dinners I made with this Blackstone BBQ Chicken and Veggie Meal Prep recipe…
BBQ Chicken Sweet Potato Bowls–
1. Dice 2 sweet potatoes, toss with olive oil, and seasoning blend of choice.
2. Air fry at 400 degrees for 15 minutes and divide into bowls. Top with the chicken from this meal prep, cheese of choice, and microwave.
3. Top with BBQ sauce and hot honey, or any other sauce of choice.

BBQ Chicken and Corn Salad-
1. Add chicken and corn from this meal prep to any chopped salad kit of choice.
2. Add BBQ sauce along with dressing packet if desired, and other toppings such as cilantro and avocado.

BBQ Chicken Baked Burritos-
1. Add chicken, peppers, corn from this meal prep, and cheese of choice to large burrito size flour tortillas. Wrap and place seam side down on a baking sheet.
2. Brush with olive oil that has been mixed with BBQ seaoning.
3. Bake in a 425 degree oven for 12 to 14 minutes and top with hot sauce, BBQ sauce, and/or sour cream.

BBQ Chicken Rice Bowls-
1. Microwave pouches of rice and top with warmed chicken and peppers from this meal prep.
2. Add toppings such as avocado, BBQ sauce, sour cream, lime, and/or cilantro.

Blackstone BBQ Chicken and Veggie Meal Prep
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 4 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
- 3 tablespoons Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 8 cloves garlic minced
- kosher salt, pepper, BBQ seasoning blend of choice
- cooking oil of choice
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 2 to 3 jalapeno peppers sliced
- 2 to 3 ears corn on the cob kernels cut off of cob
- 1/2 cup BBQ sauce
- hot honey (optional)
Instructions
- Put the chicken into a gallon size plastic bag. Add Worcestershire sauce, apple cider vinegar, garlic, kosher salt, pepper, and BBQ seasoning blend. Massage the bag until chicken is evenly coated, marinate in the fridge for at least an hour.
- Preheat your griddle to medium heat. Add cooking oil of choice along with the chicken, peppers, and corn (keeping everything separate on the griddle). Season the peppers and corn with kosher salt and pepper, and BBQ seasoning.
- Cook everything for 8 to 10 minutes, mixing it all a few times with spatulas while keeping it all separate.
- Add BBQ sauce and hot honey (if using) to the chicken during the last minute and mix until combined.Note: I added the BBQ sauce and hot honey to only half of my chicken because my son doesn't love a lot of sauce, you can add to all or half depending on your needs.
- Remove the chicken, corn, and peppers from griddle and place each in a covered container. Store in fridge for up to 5 days. See post above for 4 easy meal ideas using these ingredients.
