Blackstone Sweet Potato Cottage Cheese Bowl
I have been wanting to try this viral sweet potato bowl that everyone has been raving about, finally I decided to make it on my flat top griddle… this Blackstone Sweet Potato Cottage Cheese Bowl was amazing!

How to make Blackstone Sweet Potato Cottage Cheese Bowl
Here I am making both white and sweet potatoes to make everyone in my family happy.
With the Blackstone or flat top griddle over medium heat add your diced potatoes, season with kosher salt and pepper, add some water, and cover with a melting dome.
The potatoes will cook for 7 to 8 minutes, but remove the dome a few times to mix them and add more water before covering again.

Then add some ground beef, or in my case I used ground turkey.
Season with taco seasoning and cook another 7 to 8 minutes, mixing several times.
I also added some sweet mini peppers to the griddle , which were SO good in these bowls.

Pack it all up in containers and everything is ready for you to assemble these bowls throughout the week!

Warm the taco meat and diced sweet potatoes.
Then add as much or as little to a bowl as you prefer.

Next, cottage cheese, an avocado, the sweet mini peppers if you have them, plus a generous drizzle of hot honey!

Blackstone Sweet Potato Cottage Cheese Bowl
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 medium sweet potatoes diced, skin on
- kosher salt, pepper
- 1 pound ground turkey, chicken, or beef
- 1 packet taco seasoning
- 6 mini sweet peppers sliced
- 2 avocados diced
- 2 cups cottage cheese
- hot honey
Instructions
- Preheat your griddle to medium. Add cooking oil, the sweet potatoes, kosher salt, and pepper. Add some water and cover with a melting dome for 7 to 8 minutes. Remove the dome a few times to mix with spatulas and add more water before covering again.
- Set the melting dome aside and scoot potatoes to one side of griddle. Add more cooking oil, ground meat, and taco seasoning to an empty space on the griddle, also add the sweet peppers (keeping everything separate).
- Cook 7 to 8 minutes, mixing both the sweet potatoes and peppers a few times and using the spatulas to break apart the ground meat as it cooks.
- Remove and place into individual containers to store in the fridge until ready to make your bowls if meal prepping. Or assemble the bowls right away with some taco meat, sweet potatoes, sweet peppers, a scoop of cottage cheese, half of an avocado, and drizzle with hot honey.
