
Blackstone Chicken Sweet Potatoes and Apples
My oldest daughter and I have been meal prepping healthy dinners once a week, and this week’s recipe was Blackstone Chicken Sweet Potatoes and Apples!
She even cooked with me on the flat top griddle while it was only 7 degrees 🙂
We braved the cold together, had sooooo much fun doing it, and enjoyed this amazing Blackstone meal.

How to make Blackstone Chicken Sweet Potatoes and Apples
First prep your ingredients and place them on a tray to carry to your Blackstone griddle.
We diced a sweet potato and an apple, both with the skin on.
And chopped a bunch of kale, diced 1 1/2 pounds boneless, skinless chicken thighs, and put some Dijon mustard, hot honey, paprika, and cumin on the tray as well.

Preheat your griddle to medium heat, add some cooking oil of choice with the sweet potato, kosher salt, and pepper.
Squirt water on the sweet potatoes and cover with a melting dome to steam them for 7 to 8 minutes.
Remove the dome a few times to mix them with spatulas and add more water each time before covering again.

Set the melting dome aside, add more cooking oil, and the chicken.

Add the apples as well.
And season both with kosher salt and pepper.

Cook them separately at first, mixing a few times.
Then mix everything together on the griddle.

Next add the chopped kale, paprika, cumin, plus just a little more kosher salt and pepper.
Mix with your spatulas and cook another 3 minutes.
The kale will eventually cook down, shrinking in size.

Finally pour some Dijon mustard and honey (or we used hot honey) to this dish.

Mix together for another minute with spatulas.

She was pretty cold at this point, so she had to cuddle up next to her mama 😉

Sprinkle goat cheese over Blackstone Chicken Sweet Potatoes and Apples and serve right away or pack in containers to meal prep 🙂

Although this is super healthy, don’t underestimate how truly tasty it is!

Blackstone Chicken Sweet Potatoes and Apples
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 large sweet potato diced, skin on
- kosher salt, pepper
- 1 1/2 pounds boneless, skinless chicken thighs diced
- 1 large Honeycrisp apple diced, skin on
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 bunch kale chopped
- 1/4 cup Dijon mustard
- 2 tablespoons honey (or hot honey)
- 2 ounces crumbled goat cheese
Instructions
- Preheat griddle to medium. Add cooking oil, sweet potatoes, kosher salt, pepper, and squirt some water over top. Cover with melting dome for 7 to 8 minutes. Remove dome a few times to mix with spatulas and add more water before covering again.
- Set melting dome aside. Add more oil to an empty space on the griddle along with the chicken, apples, kosher salt, and pepper. Cook and mix a few times, keeping the sweet potatoes, chicken, and apples separate for 3 minutes, then mix them all together with spatulas and cook another 3 to 4 minutes.
- Add ground cumin, paprika, kale, and a little more kosher salt and pepper. Mix with spatulas 3 more minutes. Add Dijon mustard and honey, mix for 1 more minute. Serve with goat cheese crumbles over top.
