Blackstone Taco and Sweet Pepper Quesadillas

I made these Blackstone Taco and Sweet Pepper Quesadillas as part of my latest Blackstone Meal Prep Series, or follow this recipe to just make them on their own.

In the meal prep version, I made the turkey taco meat and sweet peppers ahead of time on the griddle (along with sweet potatoes) so that way making the quesadillas was super quick.

How to make Blackstone Taco and Sweet Pepper Quesadillas

Make the taco meat and peppers on the griddle first, or grab the containers from the fridge along with tortillas and cheese and head to your Blackstone or flat top griddle.

Preheat your griddle to medium low and add cooking oil of choice along with large, burrito size flour tortillas.

Add cheese of choice to one side of each tortilla.

Followed by the cooked taco meat and peppers.

I drizzled some cilantro lime taco sauce on mine, then more cheese.

Fold the empty side over the filled side and flip a few times, remove once the tortilla is golden brown and the cheese is melted to perfection.

Blackstone Taco and Sweet Pepper Quesadillas

Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 pound ground turkey, chicken, or beef
  • 1 packet taco seasoning
  • 6 to 8 mini sweet peppers sliced
  • 4 large burrito size flour tortillas
  • 4 cups shredded cheese of choice (or more if you want more cheesy goodness)
  • Optional: taco sauce or hot sauce (I used cilantro lime taco sauce)

Instructions
 

  • *See post above for the meal prep version of this recipe where the taco meat and peppers are already cooked, plus 3 additional meal ideas for the ingredients*
    Preheat your griddle to medium heat. Add ground meat to one side and sliced peppers on the other side of your griddle.
  • Add the taco seasoning packet to the ground meat. Cook both the meat and peppers on the griddle for 7 to 8 minutes, mixing a few times but keeping them separate.
  • Scoot both to the edge of the griddle, lower heat to low/ medium-low, and scrape center of griddle clean if needed.
  • Add more cooking oil and place the tortillas flat. Add cheese to one side of each tortilla, then the ground taco meat, peppers, taco or hot sauce if using, then more cheese.
  • Use a spatula to fold the empty side of each tortilla over the yummy filled side. Cook them a few more minutes, flipping as needed, and serve once they are golden brown, melty, and cooked to you liking.
