Blackstone PB & J French Toast Bites

These Blackstone PB & J French Toast Bites (which also have BACON) came to be a thing during my “Chopped” cooking challenge with my friend Rowena, aka Blackstone Boss B!

This is such a fun peanut butter and jelly recipe for either dessert or breakfast, and wow this would be perfect for camping!

How to make Blackstone PB & J French Toast Bites

First, separate a 12-pack of King’s Hawaiian rolls and use a rolling pin to flatten them.

Crush up some Frosted Flakes cereal in one bowl, and beat some eggs and flavored coffee creamer in another bowl.

I used this one to go with the peanut butter theme.

While your Blackstone or flat top griddle preheats over medium low, use kitchen scissors to cut a pound of bacon onto one side of the griddle.

After cooking the bacon for 5 to 6 minutes, start the French Toast bites on the other side in some butter.

A dunk into the egg batter and then into the Frosted Flakes.

Flip them a few times, and once the bacon looks just about done add your jelly or jam of choice.

Mix it just a minute or so.

Now we build this masterpiece, topping the French Toast with the jelly bacon!

Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • 1 (12-pack) King's Hawaiian Sweet Rolls
  • 2 eggs
  • 3 tablespoons flavored coffee creamer of choice (I used the Reese's Peanut Butter Cup flavor)
  • 1 pound bacon cut into bite size pieces
  • 2 cups crushed Frosted Flakes cereal
  • 4 tablespoons butter
  • 1/4 cup peanut butter (creamy)
  • 1/4 cup maple syrup
  • 1/4 cup favorite jelly or jam

Instructions
 

  • Flatten each individual roll with a rolling pin. Crack the eggs in a bowl, add the coffee creamer, and whisk until combined.
  • Preheat your Blackstone griddle to medium low heat. Add the bacon to one side of the griddle and cook 5 to 6 minutes, mixing a few times.
  • Add 2 tablespoons of the butter to the other side of the griddle. Dip each flattened roll into the egg mixture, into the Frosted Flakes, then place on griddle over the melted butter.
  • Put the remaining butter in a small saucepan or basting pot on the griddle along with peanut butter and syrup. Stir until it's melted and combined.
  • Flip the French Toast bites a few times and well as mixing the bacon for about 3 to 4 more minutes, lower griddle heat if needed.
  • Add the jelly or jam to the bacon and mix together for a minute or two. Remove once bacon is cooked how you prefer and French Toast bites are golden brown.
  • Serve the French Toast bites topped with the candied jelly bacon and drizzle the peanut butter syrup over top.
