Blackstone Mini Funfetti Cakes
This is a fun dessert recipe for the flat top griddle that truly started as an experiment. I am happy to report that Blackstone Mini Funfetti Cakes were a success!
Now I cannot wait to branch out and try many more griddle desserts and sweet treats!
I had never seen anyone attempt this before, so after a few tests we nailed the perfect cake cooked on the Blackstone!
The game changer here are the silicone egg rings 🙂
How to make Blackstone Mini Funfetti Cakes
First prepare cake batter just from a boxed mix.
If you have a homemade recipe that would be even better!
Mine was vanilla cake, obviously the Funfetti mix would have been a better choice.
I added some sprinkled and stirred them in instead.
Preheat your griddle to the absolute lowest heat setting and place some silicone egg rings and spray well with nonstick spray.
These are the rings I used from Amazon, they worked perfect!
I only have 4 rings, so I cooked these cakes in a few batches.
Keep an eye on them because griddle surface temperatures can vary.
Then scoop some cake batter into the rings, about 2/3 of the way full.
The cake will rise so I did learn not to overfill them.
Cover with a melting dome for 11 to 13 minutes.
Gently lift the handles and pull the egg rings up.
I sprayed mine well so nothing stuck.
I did have to push the handles down, so some of the cakes had an indent… but we fixed that with icing 😉
But just look at those perfectly round little cakes!
Let them cool completely before spreading vanilla cake icing and adding more sprinkles.

Blackstone Mini Funfetti Cakes
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
- Silicone Egg Rings
Ingredients
- 1 box Funfetti cake mix (or vanilla) plus ingredients to prepare batter
- nonstick cooking spray
- 1 container vanilla cake icing
- sprinkles
Instructions
- Prepare cake batter according to package directions. Stir in some sprinkles if you don't have a Funfetti cake mix.
- Preheat griddle to the lowest possible heat setting. Put the silicone egg rings on griddle and spray well with nonstick cooking spray. Pour some batter into each egg ring, cake will rise so about 2/3 of the way full is perfect.Note: I only have 4 egg rings so I cooked mine in a few batches. Keep an eye on them as griddle surface temperatures can vary.
- Cover with a melting dome or lid (a foil pan works too) for 11 to 13 minutes.
- Remove egg rings, use spatula to transfer cakes to a tray or baking rack. Let cool completely and then spread vanilla icing on each and add sprinkles over top.Note: The batter may overflow as they cook, that's ok! Carefully lift the egg rings and shake gently to release… the cake will be a perfect circle.
