Blackstone Eggs Benedict Chopped Sandwiches
Do you ever remix recipes?? I made Blackstone Eggs Benedict Chopped Sandwiches based off a version of a similar sandwich!
My friends at Griddle Up and Blackstone Bros created an absolutely EPIC Eggs Benedict sandwich on the griddle with prosciutto, homemade hollandaise, a fresh bakery roll… it was amazing!
I made it into an easy weeknight meal with ham, a hollandaise sauce mix, and more of a chopped version.
This would be a fun camping breakfast, or a breakfast-for-dinner.

How to make Blackstone Eggs Benedict Chopped Sandwiches
Preheat your Blackstone or flat top griddle to medium heat.
Put a packet of Hollandaise in a small saucepan with the milk and butter from the package directions.
And place the saucepan on one side of the griddle, whisking the sauce several times.
Then add cooking oil of choice and some diced deli ham to other side of your Blackstone griddle.

Cook the ham for 4 to 5 minutes, mixing the sauce a few times too.
Crack eggs in a bowl along with some milk, kosher salt, pepper, beat with a fork, and pour right over the ham.

Use spatulas to mix and scramble the eggs and ham for a minute or two.
Then add provolone cheese slices over the ham and eggs and use your spatulas to mix it all together as the cheese melts.

Divide the mixture into 4 piles on the griddle, similar shape as the sub buns.
Open each sub bun and place over each pile.

And after a minute or two, use your spatula to turn each one over and transfer to a tray.

Drizzle the hollandaise sauce over your Blackstone Eggs Benedict Chopped Sandwiches and enjoy!!

Blackstone Eggs Benedict Chopped Sandwiches
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 packet Hollandaise sauce (plus 1 cup milk and 1/4 cup butter for the mix directions)
- cooking oil of choice
- 12 ounces chopped ham (mine was sliced deli ham)
- 8 eggs
- 1/4 cup milk
- kosher salt, pepper, breakfast seasoning blend (optional)
- 8 slices provolone cheese
- 4 sub buns
- Optional: chopped chives
Instructions
- Preheat your griddle to medium heat. Put the packet of Hollandaise in a small saucepan with the milk and butter from the package directions. Place the saucepan on one side of the griddle and whisk the sauce several times.
- Add cooking oil of choice and ham to other side of griddle. Cook 4 to 5 minutes, mixing a few times.Note: Adjust heat on either side of your griddle as needed, I lowered the ham side slightly and once my Hollandaise sauce was thick enough I lowered that side.
- Crack the eggs in a bowl along with the milk, kosher salt, pepper, and seasoning blend (if using). Beat with a fork and pour over the ham.
- Use spatulas to mix and scramble the eggs and ham for a minute or two. Add the cheese slices over the ham and eggs, use spatulas to mix it all together as the cheese melts.
- Divide the mixture into 4 piles on the griddle, similar shape as the sub buns. Open each sub bun and place over each pile. After a minute or two, use your spatula to turn each over and transfer to a tray.Note: Picture examples in post above.
- Drizzle your Hollandaise sauce over top and add chives if desired.Note: We did not use all of the sauce but I saved it for steak night the next evening.
