Blackstone Chicken Taco Bites
These Blackstone Chicken Taco Bites are a great beginner recipe for the griddle.
But that certainly doesn’t mean that even the most expert griddlers can’t benefit from this super easy and versatile recipe.
These yummy pieces of taco chicken can be used in SOOOO many ways 🙂
Serve as is for a healthy and low carb dinner, or use them in tacos, salads, wraps, quesadillas, or meal prep bowls.
How to make Blackstone Chicken Taco Bites
First cut 2 pounds of boneless, skinless chicken thighs (or chicken breasts) into bite size pieces.
Then put them in a bowl, or into a gallon size plastic bag for easy clean up.
Add some olive oil, lime juice, and minced garlic.
Plus 3 tablespoons of your favorite taco seasoning blend.
And some kosher salt and pepper.
Then massage the bag until everything is evenly mixed and marinate in the fridge for a few hours.
Or do this the night before to marinate overnight.
Preheat the griddle or flat top grill to medium heat for a few minutes.
Then add more olive oil, or any cooking oil of choice along with the seasoned chicken bites.
This cooks pretty quick, only about 7 to 9 minutes total.
Mix it together a few times with your hibachi spatulas.
And your Blackstone Chicken Taco Bites are ready the serve 🙂
We had the kids and grandkids over for a fun taco night and I served these on the taco bar.
And with the leftovers I got a salad kit from the store and served them over top for an easy second dinner.

Blackstone Chicken Taco Bites
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
- 3 tablespoons taco seasoning blend
- 2 tablespoons olive oil (or any oil of choice, plus more for the griddle)
- 1 tablespoon lime juice
- 5 to 6 cloves garlic minced
- kosher salt, pepper
Instructions
- Put the chicken bites in a gallon size plastic bag or bowl. Add the taco seasoning, olive oil, lime juice, garlic, kosher salt, and pepper. Mix until combined and marinate in the fridge for a few hours.
- Preheat the griddle to medium for a few minutes. Add some olive oil or any cooking oil of choice and the seasoned chicken bites.
- Cook 7 to 9 minutes, mixing together with hibachi spatulas.
- Serve as is or use them to make chicken tacos, taco salads, nachos, quesadillas, or in meal prep bowls.
